Having made this soup a few times now I think it’s just one of those dishes that you can easily make in no time for a quick tasty fix!
When it comes to food I’ve learnt less can definitely be more. This recipe is so simple and can easily be tweaked to your own tastes. I must admit I’m not much of a measurer when it comes to cooking, I tend to just throw things in that I think will taste good. Hence a lot of my measurements can be quite vague but a little bit more or a little bit less of an ingredient won’t make this soup any less delicious! Just trust yourself on what you think smells/tastes good and it can go a long way!
–Peas: petit pois works best because they tend to be the sweetest, I would say I used about 4 cups of this
–2 small/medium or 1 giant onion roughly chopped
–A generous shake of thyme
–Handful of fresh mint
–2 tsp chopped chives
–1 vegetable stock cube
–350ml approx. boiling water
–1tsp soya sauce to taste
1.) Sauté the onion on a hot oiled pan. So cook until the onion starts to get clear. If you find the pans starting to get a bit dry and the onion is starting to burn just add a splash of water to the pan. This will also help steam the onions a bit and cook them quicker.
2.) Once sautéd add the minced garlic. This will start to smell lovely as the garlic starts to cook! Be careful not to burn the garlic because it will turn bitter, just keep stirring it to move it around.
3.) Around about now you can fill the kettle up and put it on to boil. Also add the thyme, chives, soya and crumble up the stock cube into the pan. Keep stirring to prevent anything from burning and once the kettle has boiled add the hot water to the mix.
4.) Throw in the mint and peas giving the whole mixture a good stir before whizzing it all up. If you used frozen peas you might find you’ll want to wait for them to thaw out a bit before whizzing it. Don’t forget you can add more of anything so you get the taste you like! You might even want to add a sprinkle of sugar if your peas weren’t very sweet.
5.) Once whizzed bring it to the boil (or however hot you like) and eat!!! I ate mine with some sliced bread on the side with some pesto spread. YUM!
